The arrival of warmer weather means grilling season is officially in full swing, and at our house, the grill is fired up at least three to four nights a week. There’s something about the smoky char, the juicy flavors, and the irresistible aroma that makes grilling an essential part of spring and summer dining. And this burger? Well, it’s a game-changer.
Mark and I are absolutely obsessed with these burgers, and once you take your first bite, you’ll understand why. Every time we make them, we sit down in silence, savoring every juicy bite, with only the occasional “Mmmmmm… soooo good” breaking the quiet. The best part? These burgers are so packed with flavor that even if you’re watching your carb intake, you can ditch the bun and still enjoy a spectacular meal.
A Recipe with a Twist
This recipe was originally featured in Bon Appétit, July 2006, and we’ve made a few tweaks to make it even better. The original recipe included pecans, but while we love nuts, we found them unnecessary in this dish. Instead, we suggest saving those pecans for a side salad—perhaps a fresh spinach salad with goat cheese and a light balsamic dressing?

Andouille Beef Burgers with Spicy Mayo & Caramelized Onions

Ingredients
Spicy Mayo:
- 3/4 cup mayonnaise
- 1 tablespoon fresh lemon juice
- 1 teaspoon Cajun or Creole seasoning blend
- 1/4 teaspoon hot pepper sauce (adjust to your heat preference)
Caramelized Onions:
- 1 1/2 lbs onions, thinly sliced
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 tablespoon brown sugar
- Salt & pepper to taste
Burgers:
- 1/2 lb andouille sausage, cut into 1/4-inch cubes
- 1 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 1/2 lbs ground beef
- 8 oz block blue cheese, sliced*
- 6 large hamburger buns
- Watercress tops (optional)
Directions
1. Make the Spicy Mayo:
In a small bowl, whisk together mayonnaise, lemon juice, Cajun seasoning, and hot pepper sauce. Cover and refrigerate for up to two days. This spicy mayo is the perfect creamy, tangy, and slightly fiery addition to your burger!
2. Caramelize the Onions:
In a large skillet over medium heat, combine onions, olive oil, garlic, and brown sugar. Cook, stirring occasionally, until the onions are soft and golden brown—about 25 minutes. Season with salt and pepper, then set aside. These onions add a rich, sweet depth of flavor that balances the spice of the andouille sausage beautifully.
3. Prepare the Burgers:
In a large bowl, mix the ground beef, andouille sausage cubes, salt, and black pepper until just combined. Form the mixture into six 1/2-inch thick patties, ensuring that the sausage pieces are evenly distributed.
4. Fire Up the Grill:
Preheat your grill to medium-high heat. Place the patties on the grill and cook until browned on the bottom, about 3 minutes. Flip the burgers, add a slice of blue cheese on top, and continue grilling for about 3 more minutes for medium doneness (adjust cooking time to your preference).
5. Assemble the Burgers:
Spread a generous layer of spicy mayo on each toasted hamburger bun. Place the burger on the bun, top with caramelized onions, and, if desired, add fresh watercress for a peppery bite. Add the top bun, and get ready to enjoy one of the most flavorful burgers you’ve ever tasted!
