Chocolate Dipped Rice Krispies Treats

Did you have a good weekend? My little ones were feeling a bit restless yesterday, so we spent the afternoon baking—a wonderful way to pass the time and bring a little joy to the kitchen. On the menu were homemade doggy biscuits, decadent brownies, and these absolutely divine Chocolate Dipped Rice Krispies Treats. We brought a batch to dinner at my sister-in-law’s house, and let me tell you—nothing takes a simple treat to the next level like a little dip in chocolate! Even the adults couldn’t resist them.


Chocolate Dipped Rice Krispies Treats

Ingredients:

  • 3 tablespoons butter
  • 1 package (10 oz., about 40) marshmallows
  • 6 cups Rice Krispies cereal
  • 1 cup chocolate chips (milk or dark)
  • Sprinkles or colored sugar for decoration

Instructions:

  • Prepare the Pan: Grease a 9×13-inch baking dish with butter or non-stick spray.
  • Melt the Butter & Marshmallows: In a large saucepan, melt the butter over low heat. Add the marshmallows and stir constantly until fully melted. Remove from heat.
  • Mix in Cereal: Add the Rice Krispies cereal and stir until evenly coated.
  • Spread & Cool: Spread the mixture into the greased pan using a piece of wax paper sprayed with cooking spray (this makes it easier to press the mixture evenly). Let it cool completely before cutting into 2-inch squares.
  • Melt the Chocolate: In a microwave-safe bowl, melt chocolate chips in 30-second intervals, stirring between each, until smooth and glossy. (Ghirardelli melts beautifully!)
  • Dip & Decorate: Lay out a piece of wax paper on your countertop. Using a teaspoon, dip half of each Rice Krispies treat into the melted chocolate, smoothing evenly. Immediately sprinkle with festive decorations like sprinkles or jimmies.
  • Let Set: Place the treats on wax paper and allow the chocolate to harden completely before serving.
  • Enjoy!

When making these with kids, I found that it worked best if I handled the chocolate dipping while they took charge of the decorations—otherwise, we ended up with chocolate-covered hands and counters (as evident by my son Sean’s chocolatey fingers!).
