Good Monday morning and welcome to Mangia Mondays!

Did you hear that my co-host, Kristin of Delightfully Dowling, and her husband Andrew became a family of three last week? Sweet baby Charlotte Olivia delighted them with her arrival and she couldn’t be cuter. Congrats Dowlings!! Let’s toast all this wonderful news with a celebratory libation, shall we?

With the Fourth of July on Wednesday, and a summer ahead of relaxing on the beach/deck/rooftop/patio/poolside, I offer to you this simple and fresh cocktail to enjoy.

Ingredients (per drink)

2 medium sized strawberries
2 oz. peach nectar
4 oz. vodka
ice

Remove stem from strawberries. In a blender, combine strawberries and peach nectar until strawberries are smooth.

Fill a 10 oz. glass with ice and add vodka and strawberry-peach mixture; stir to combine.

{I like mine with bits of strawberry in there, but you could strain out the solids as well.}

Enjoy!
